There are a lot of recipes for Banana Loaf and each one claims to be the best. I prefer recipes that are simple, not too many ingredients and easy to follow. This one is adapted from Nigella Lawson's recipe and hasn't failed me ever.
I won't bore you with the science behind baking, stories, philosophy, will get straight into the ingredients and recipe.
Ingredients:
Wet Ingredients:
Over ripe Banana - 3 - mashed
Eggs - 2
Olive Oil (or any other oil without a pronounced smell) - 125 ml
Vanilla - 1 tsp
Dry Ingredients:
All purpose flour - 250 gm
Sugar - 100 gm
Baking Soda - 1/2 tsp
Baking Powder - 1 tsp
Salt - 1/4 tsp
Cranberries / Walnuts / Anything else - a handful or two
Method:
Pre-heat the oven 200 deg C
Pour in a loaf pan, bake for 30 mins. After this point, I reduce the temperature to 175, cover the pan with foil and bake for another 15-20 mins. Let cool and slice.

- In a jug, mix the olive oil and 2 eggs and beat well.
- In a large bowl, add all the dry ingredients (except the last one), tip in the mashed banana, egg-oil mixture & vanilla.
- Mix well using a spatula (not a whisk).
- Add the berries / nuts and give it a good mix.
Pour in a loaf pan, bake for 30 mins. After this point, I reduce the temperature to 175, cover the pan with foil and bake for another 15-20 mins. Let cool and slice.


Banana bread is my favourite! I must try out this recipe.. looks simple to make.. just the way I like.. :-)
